Canadian Pudding recipe

This is another dish that makes an appearance in the Victorian segments of the novels I’m working on.

Ingredients

6 Tablespoons of Indian meal
2 tablespoons of caster sugar
3 eggs
Rind of 1 small lemon
1 quart of milk
Stoned and halved raisins

Method
Mix meal with cold milk
Infuse lemon in rest of milk
Strain boiling milk over meal
Add sugar and simmer for ten minutes
When cool add the eggs
Pour mix into greased basin
Stream for two and half hours
Serve with sauce
